DECEMBER HOLIDAYS

THE POTATO PROBLEM

by Jessica Rupe

William was in a dilemma, and was not sure what to do. A shipment of fresh produce was always welcome Below, especially in December, but one of the helpers had sent down two 50 pound boxes of Russet potatoes! Even feeding everyone in the community (especially the men, with them working all day doing manual labor, which built up quite an appetite), he still couldn’t use 100 pounds of potatoes before they went bad.

Searching through his cookbooks, William found a recipe for latkes, the potato pancakes served at Hanukkah. Check the calendar, yep, Hanukkah was right around the corner, not even a week after Thanksgiving this year. And latkes were very similar to homemade hash browns. Could this be the solution to his problem? Maybe, now if he could just enlist some help shredding those potatoes; those box graters could be deadly on your hands…
